The lineup included sausage-stuffed mushrooms, really easy foil pocket potatoes and some asian-marinated pork chops on the grill.
Here's a quick look at the stuffed mushrooms. Stay tuned for more on the easy foil pocket potatoes and the asian-marinated pork chops on the grill!
I bought some great sausage from Dorothy Lane Market after working in Dayton (love and miss that place so much!) and combined the cooked sausage, grated garlic, and chopped onion along with the chopped stems from the mushrooms I had cleaned up. After stuffing the mushrooms, I sprinkled some leftover manchego cheese (I realize a grated parm or even a mozzarella would make more sense but I'm all about being resourceful) on the tops and baked until just barely browned. Missy refused to try the mushrooms (she's a picky eater to cook for) but Dustin and I loved them and brought the leftovers over to his parents' house on Sunday for Dustin's Mom's birthday dinner and they loved them as leftovers so I think it's a winner :)

Ashley,
you are such a great, creative cook! You are really inspiring me to try new things instead of the same drab old things that I cook all the time. Thanks for passing along your recipes and cooking ideas. I love you, Patti
